These paratha stuffed with crumbled spiced cottage cheese is a delicious and protein-packed healthy dish. The fact that they are shallow fried flatbread makes them an easy and tempting savoury for school lunchboxes as well as lunch or dinner. They can be served with curd, chatni or any curried dish. It's an all-time favourite at home, restaurants and Punjabi dhabas/ roadside eateries. There are different versions of paneer paratha all over India according to region n taste, the one I have made here is a typical north Indian flavour. You can definitely try with your own set of local ingredients and spices
- 4-5 cups Wheat flour loosely kneaded
- 250 grams Cottage cheese/ paneer
- 1 tbsp Ginger grated
- 1 tbsp Red chili powder
- 1 tbsp Chat masala
- 1 tbsp Salt
- 1/2 tbsp Garam masala powder
- 1 tbsp Amchur powder
- Oil for frying
First of all, tips for making mess free paratha is that knead a moist, soft n non-sticky dough so that the bread split open while rolling them flat.
Take wheat flour in a large bowl, add water slowly and kneed a loose dough. add 1 tbsp of oil during needing to get a smooth texture.
Cover the dough and keep aside till we are preparing our stuffing.
For Preparing the stuffing: In a large bowl grate 250gms of cottage cheese/paneer. To this add salt, chat masala, grated ginger, chillies, garam masala, amchur powder and mix well.
Keep aside for 5mins.
For making parathas or flatbread, take a small portion of dough and start rolling into a small chapati.
Place the filling in the centre and start pleating toward the centre. Sprinkle some flour and roll them softly in shape of chapatis.
Meanwhile, heat a tawa, and now place the paratha on hot tawa and cook both side 5 mins. Apply ghee/olive oil on both sides and n cook for another 5 mins.
Serve hot parathas with chatni, raita, curd or any curry.
