The recipe that always waters my mouth whenever I think about it. We are a hardcore non-vegetarian family. we have to include some sort of flesh every three days. in that perspective sometimes it becomes difficult to innovate new dish every time, which makes us stick to the traditional forms of cooking like curries, stew or Indian do- Pyaza when we don't have time as it does not involve too much thinking in terms of what to do next! However, I definitely love to try new dishes, it makes me happy and contented! (When I get time from my research work).
Cooking has always been my hobby and I can never get tired of doing this. Cooking and feeding make me feel empowered and satisfied at the same time.
Chicken ghee roast has this amazing musty flavour which makes it irresistible for anybody. we live on the 9th floor, and my husband always tells me that he can smell the aroma of this from the 8th floor itself. (i am not joking).Without any delay let's jump into this stunning and flavoursome recipe.
- 1 Kg Chicken (washed)
- 2 tbsp Ginger - Garlic paste (1:2 ratio)
- 2 large Onion (Finely Chopped)
- 1 tbsp Tomato puree
- 1 tbsp cumin seeds- 1 tbsp
- 1-2 small bay leaf- 1-2 small
- 1 inch cinnamon stick- 1 inch
- 4-5 cloves-4-5
- 1-2 Cardamom- 1-2 small
- 1.5 tbsp Chicken Masala- 1.5 tbsp
- 1 tsp Turmeric- 1tsp
- Salt (as per taste)
- 5-6 Green Chiilies (or as per your taste)
- 6-7 tbso Ghee / clarified butter For cooking
Before Starting to cook, we need to roast all the whole spices and grind it to make the spice powder. keep it aside.
Now, First of all, heat ghee/ clarified butter in a pan.
Add washed and dried chicken pieces into the pan and saute it. cook it for some time till the chicken turns a little golden brown.
Take out the chicken from the pan and keep it aside for later use.
Now, into the same pan add cumin seeds, green chillies bay leaf and let it splutter.
Now add chopped onion and saute it till it turns golden brown. Go on and add Ginger- garlic paste, mix thoroughly and cook.
Furthermore, add tomato puree and mix well. Cover the lid and cook for 5 minutes.
In Addition to this now add chicken masala, turmeric, and the roasted spice mix we prepared beforehand.
Mix everything together and cook it on medium flame till the masala starts to leave the ghee.
Later add the chicken that we sauted earlier. Mix everything well and add a little bit of water, cover and cook until the chicken turned tender and juicy.
Finally, check if the chicken is cooked thoroughly, and garnish it with freshly chopped coriander leaves.
